Thai Slaw

Another quick, healthy snack or side dish that is just the right blend of sweet, salty and citrusy.  I love when I have this in the fridge on those days I’m craving something and can’t quite pin point the craving.  Thai Slaw is so simple in ingredients, but mixed together in just the right measurements to easily become one of my favorites.

Serves 8:

1 cup brown rice

1 bag coleslaw/deli slaw (red/green cabbage and carrots)

¼ cup green onion

¼ cup cilantro

¼ cup peanuts (roasted, unsalted)

1 tbsp. peanut butter

1 lemon (for juice)

1 lime (for juice)

1 tbsp. maple syrup

2 tbsp. soy sauce

1 tsp. crushed red pepper

1 tsp. black pepper

1 tsp. ginger powder

1 tsp. roasted sesame seeds (optional)

While rice is cooking add all other ingredients into a large bowl.  Drain rice then add it to the bowl and mix it all together.
