Italian Pasta Salad

I don’t cook pasta often, but when I do it’s a delicious, healthy salad which takes about 15 minutes to make. This Italian Pasta Salad is another good one to prep on Sunday to have handy in your fridge for a quick weeknight dinner or work day snack.

Serves 4:

2 cups rotini pasta

1 large tomato or ½ cup cherry tomatoes

½ can olives

½ cucumber

½ green bell pepper

¼ cup green onion

1 tsp. dried oregano

1 tsp. thyme

1 tsp. dried basil

1 tsp. garlic powder

1 tsp. sea salt

1 tsp. black pepper

2 tsp. balsamic vinegar

2 tbsp. olive oil

Cook pasta according to instructions on packaging.  While the pasta is cooking add all diced/chopped ingredients and seasonings into a large bowl.  Strain pasta once thoroughly cooked and mix into the rest of the ingredients.  Bon appetit!
