Hearts of Palm Ceviche

You and everyone else at the potluck or party will not be disappointed with this super easy appetizer.  This vegan ceviche is sooo delicious and fresh.  It only takes 10 mins to make with one bowl.  Easy prep and easy clean up, my kind of dish!!

Serves 4-6 as an appetizer (or just me by myself in one sitting!)
1 can hearts of palm
1 large tomato
1 cucumber
1 small jalapeno
1 avocado
¼ cup green onion
¼ cup cilantro
2 lemons (for juice)
2 limes (for juice)
1 tbsp. sea salt
1 tbsp. black pepper
1 tbsp. garlic powder (optional)



  1. Chop all fresh produce and add into a bowl with juice from lemons/limes and salt/pepper.
  2. Drain hearts of palms and run your knife over it a couple times to chop it up.
  3. Add hearts of palm into bowl and stir. Let sit for an hour or two before serving cold with chips.
