Serves 4
- 1 can pinto beans
- 2 cups brown rice (optional)
- 1 zucchini
- 3 bell peppers
- 1 shallot
- 2 tbsp. olive oil
- 1 tsp. cumin
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. chili powder
- 1 tsp. paprika
- 1 tsp. sea salt
- 1 tsp. black pepper
- ¼ cup cilantro (garnish)
- 2 limes (for a little juice on top)
Directions
- Bring 2 cups brown rice and 3 cups water to a boil. Once it boils, reduce heat, cover and let simmer.
- Chop up veggies and add into a medium size pan with olive oil and spices. Turn heat to medium.
- Allow all the flavors to cook together for about 15 mins stirring occasionally.
- Add 1/4 cup beans and rice to a bowl and top with fajita mix, adding cilantro and a squeeze of lime.
