Fajitas

Serves 4

  • 1 can pinto beans
  • 2 cups brown rice (optional)
  • 1 zucchini
  • 3 bell peppers
  • 1 shallot
  • 2 tbsp. olive oil
  • 1 tsp. cumin
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. chili powder
  • 1 tsp. paprika
  • 1 tsp. sea salt
  • 1 tsp. black pepper
  • ¼ cup cilantro (garnish)
  • 2 limes (for a little juice on top)

Directions

  1. Bring 2 cups brown rice and 3 cups water to a boil.  Once it boils, reduce heat, cover and let simmer.
  2. Chop up veggies and add into a medium size pan with olive oil and spices.  Turn heat to medium.
  3. Allow all the flavors to cook together for about 15 mins stirring occasionally.
  4. Add 1/4 cup beans and rice to a bowl and top with fajita mix, adding cilantro and a squeeze of lime.
