Easy Quinoa Bowl (Mexican Style)

This simple, go to healthy quinoa salad will have you wanting more, but don’t worry, it’s filling and nutritious so your body will tell you when you’re full.  This fan favorite takes about 10 mins to make, that includes prep time, cook time and clean up.  My recommendation is to extra to get you through the week.  Having this quick, healthy snack convenient in your fridge at work/home will stop you from reaching for processed, packaged food.

Serves 4:

1 cup rainbow quinoa

1 can black beans

1 can corn

¼ cup cilantro

½ red bell pepper

¼ cup green onion

1 jalapeno

1 lemon (for juice)

3 tsp. cumin

1 tsp. sea salt

1 tsp. black pepper

Bring 1 cup quinoa and 1 cup water to a boil.  Once it boils reduce heat, give it a stir, cover and remove from heat while you prep other ingredients.  Add all diced, cut and chopped (whatever method of knife to food works best for you) ingredients into a large bowl with spices and lemon juice.  Mix in the quinoa and you are good to go!
